Ingredients

    Swanson Chicken Broth 99% Fat Free, 1.5 cup
    Cider Vinegar, 0.25 cup
    *Cumin ground, 1 tbs
    Paprika, 1 tsp
    Salt, 1 tsp
    Pepper, ground black, 0.5 tsp
    Pepper, red or cayenne, 0.25 tsp
    Beef, flank steak, 1.5kg/3lb
    Onions, raw, 2 medium chopped
    Peppers, sweet, red, raw, sliced, 2 cup
    Apples, fresh, 2 medium chopped
    Celery, raw, 3 stalk, medium chopped
    Garlic, 3 cloves minced
    Cilantro, raw, 4 tbsp chopped
    Sweet potato, 3 sweetpotato,(12oz)

Directions

Whisk the broth, vinegar, cumin, paprika, salt, black pepper and cayenne in a 5- or 6-quart slow cooker. Submerge the meat, then add the sweet potato, onions, red peppers, apples, celery and garlic, making sure the vegetables are under, between, and over the steaks.

Cover and cook on low until the meat is fork-tender, about 8 hours.

Transfer the meat to a cutting board; set aside for 10 minutes. Shred the meat with two forks, pulling it into strands along the grain. Return to the slow cooker; stir in cilantro. Set the slow cooker on warm and serve within 4 hours. Yields about 1 1/4 cups per serving.
