Introduction

These are great as breakfast or a snack and freeze beautifully for future meals. It is a great way to use up any yogurt that is getting close to expiration. Instead of vanilla, you could use fat-free sour cream or plain yogurt and up the amount of sugar a bit, or use containers of fruit yogurt. Ingredients

    1/8 C ground flaxseed (optional)
    1/3 C sugar
    1/3 C orange juice
    1/4 C vegetable oil
    2/3 C dried papaya, chopped fine
    1 C yellow cornmeal
    1 C unbleached white or whole wheat flour (nutrition facts are for white)
    1 t baking soda
    1 t baking powder
    1 C nonfat vanilla yogurt
    2 eggs

Directions

Pre-heat oven to 375. Coat 12-indent muffin pan with non-stick spray or fill with paper liners. Whisk together wet ingredients. Stir together dry ingredients. Stir papaya into dry ingredients (helps the pieces not stick together), then stir all together until mixed. Fill muffin cups evenly and bake for about 15 minutes or until a paring knife inserted into the center comes out clean.
