* Roasting Chicken Carcass
* Water, tap, 1 Gallon
* Sage, ground, 1 tbsp
* Marjoram, dried, 1 tbsp
* Bay Leaf, 1 tbsp, crumbled
* Pepper, black, 1 tsp
* Salt, 4 tbsp
* Carrots, raw, 2 large (7-1/4" to 8-1/2" long)
* Turnips, 6 medium
* Chicken stock, home-prepared, 4 cup
* Leeks, .25 cup
Directions
Makes 12 2cup servings
Boil a chicken carcass that has had 2 servings removed from it in the water and stock.
While it is boiling use a small serving spoon to clean the scum off the top
Also slice the carrots, dice the turnips and shred the cabbage and dice the leeks.
when there is no more accumulation of the fats on the surface of the boiling chicken add the spices and leeks, boil for 10 min then transfer to a 6 quart crock pot and add the vegetables
let sit on high for 5 hours then serve
