Ingredients

    1 (10 oz) package yellow rice mix
    1 cup chopped onion
    1/2 cup green bell pepper
    1/2 cup chopped carrot
    1 Tbsp olive oil
    1 chicken breast no skin boiled and cubed (leave out for vegetarian option)
    1 (15 oz) can black beans, drained
    1 (10 oz) can diced tomatoes and green chiles, undrained
    1 cup shredded Cheddar cheese

Directions

Preheat oven to 350 degrees. Prepare rice according to package instructions.

Meanwhile, saute onion, bell pepper and carrot in hot oil in a skillet over medium heat 10 minutes or until tender

Combine hot cooked rice, onion mixture, chicken (optional), beans, diced tomatoes and chiles, and 1.2 cup cheese in a lightly greased baking dish. Sprinkle with remaining 1/2 cup cheese.

Bake, covered, at 350 for 30 minutes; uncover and bake 10 additional minutes or until cheese is melted

    Incredible!
    This was delicious! I omitted the bell peppers & used 2 cups of Monterey Jack & Colby cheese & a bit more chicken. My husband doesn't like yellow rice, but said this was great anyway. He thought it needed a bit of texture so he wants shredded lettuce on his next time with a dollop of sour cream. - 10/5/12

    It's great~! I do add about 3 cups of chopped chicken from a rotesserie chicken. - 9/21/09
