Introduction

Roasted Chicken breast and penne pasta tossed with red wine vinegar and olive oil.
Chicken is added in last so it does not absorb the vinegar.

Ingredients

    2 chicken breast halves
    garlic salt
    10 oz uncooked penne pasta
    3/4 c shredded cheese
    1/4 c red wine vinegar
    3 Tbsp olive oil
    3/4 c green onion, chopped
    3 ripe plum tomatoes, chopped
    2 cloves garlic, pressed

Directions

Season chicken breast with garlic salt. Broil until no longer pink in center and juices run clear(approximately 10 min per side). Shred cooked chicken into bite size peices. Meanwile cook pasta according to package directions, drain. Toss all ingredients together except chicken. Add shredded chicken last. Serve immediately.
