Ingredients

One chicken thigh
1/2 cup chopped green beans (raw)
1 clove garlic, diced
1/2 or less cup chopped raw baby spinach
1 TBSP low sodium soy sauce
1 TBSP flour
1 cup cooked white rice (optional)
Directions
Start the rice
Chop up chicken thigh into bite size pieces.
Heat up skillet with 1 TBSP olive oil
Dredge chicken pieces with flour and place in skillet and cook for about 15 min., turning frequently to get golden color
While chicken is cooking, chop up green beans and place in skillet. Saute green beans until a little brown and soft.
Drizzle with soy sauce and turn over chicken and green beans until coated and carmelized with soy sauce.
Dice 1 clove of garlic and saute with chicken and green beans until soft.
Throw in some chopped spinach at the end and heat through for 1-2 minutes.
Serve with 1 c. of rice or fettucine noodles
(I often put the rice in the skillet and mix it all up together.)
