This recipe is just a little bit sweet, as opposed to the super-sweet versions we all grew up with.

Ingredients

    Long grain brown rice, raw
    Vanilla rice milk
    Cinnamon
    Juice and zest of one lemon

Directions

Place the rice, rice milk, cinnamon and lemon juice, in a medium-sized pan. Bring to a boil, lower heat and simmer 30-40 minutes, stirring occasionally. Add a little more rice milk if required. The rice should be very tenter and the liquid well absorbed.

Serve hot or cold sprinkled with a little lemon zest.

This recipe is desiged to be within 150-160 calories, which is optimum for a snack.
