Ingredients

1 lb boneless skinless chicken with visible fat removed
4 teaspoon Reduced Fat Feta
1/2 tablespoon Basil
Yellow (or red) Bell Pepper
2oz Mozzarella divided
1/8 cup diced Tomato
One green onion
Dash of Salt
Dash if Garlic Powder
1 cup Tomato and Basil Marinara Sauce
Directions
Use two half pound chicken breasts, it makes prep MUSH easier. Otherwise you can use quarter pound breasts, but then you will need twine or toothpicks to hold the chicken together.
1. Pour enough sauce in a small baking dish to just cover the bottom of the dish.
2. Cover chicken breast with plastic wrap and pound until 1/4 in thin.
Stuffing:
In a small bowl mix the basil, feta, salt and garlic powder first!
Add minced tomatoes, bellpepper, and green onion.
Use half stuffing for each breast and simply roll up and place in a glass baking dish.
Cover the chicken with the remaining mariniara and each with one ounce of mozzarella cheese.
Cover with tin foil and bake at 385 for 40-45 minutes.
Let cool for 5 minutes, cut each breast in half and enjoy!
