Ingredients

    1 lb Extra Lean Ground Turkey
    1 Medium Onion
    2 Carrots
    2 Stalks of Celery
    2 Cloves of Garlic
    1 tbsp Olive Oil
    1 28 oz can Whole Tomatoes
    1 14.5 oz can Kidney Beans
    1 14.5 can White Hominy
    2 cups Chicken Broth

    Spices
    2 tbsp Chili Powder
    1 tbsp Cumin
    1 tbsp Paprika
    1/2 tbsp Oregano
    1/2 tsp Cayenne Pepper
    Salt and Pepper (to taste)

Directions

1. Chop Onions, Celery, Carrots and Garlic.
2. Saute vegetables in olive oil in a pot over medium heat.
3. Remove Vegetables and brown turkey in pot
4. Add Vegetables bact to pot and add Tomatoes
5. Rinse Beans and Hominy of canning liquids and add to pot
6. Add Chicken Broth and spices (adjust to your taste)
7. Simmer on low for 30 minutes

Makes 6-8 1-cup servings

    Incredible!
    I used low sodium alternatives to decrease the sodium in this recipe and would probably cooked the chili longer so the vegetables are more tender the next time. Otherwise, an excellent chili that I will make again. - 2/4/12

    soooooo GOOD! i added radishes, corn, asparagus because i needed something to do with them. I like it because it's not too overpoweringly spicy, you still can taste all the different vegetables. Stir in some shredded lettuce when you serve it and it gives it a nice crisp freshness. Super filling! - 9/20/09
