Introduction

Bran muffins low in fat and high in flavor! Bran muffins low in fat and high in flavor!
Number of Servings: 12

Ingredients

    1 1/2 cup wheat bran
    1 cup non fat milk
    1 tbsp vinegar or lemon juice
    1/3 cup applesauce
    1 egg
    2/3 cup brown sugar
    1/2 cup all-purpose flour
    1/2 cup wheat flour
    1 tsp baking soda
    1 tsp baking powder
    1/2 tsp salt
    1/2 cup dried craisins (or shredded carrots, pumpkin purree, or mashed bananas)
    2 tbsp flax seed meal (optional)
    1/2 tbsp cinnamon
    Drizzle honey (optional)

Directions

Preheat oven to 375 degrees F (190 degrees C). Grease muffin cups or line with paper muffin liners.
Mix together wheat bran and milk and vinegar or lemon juice; let stand for 10 minutes.
Beat together apple sauce, egg, sugar and vanilla and add to milk/bran mixture. Sift together flours, baking soda, baking powder, salt, cinnamon, and flax. Stir flour mixture into milk/bran mixture, until just blended. Fold in craisins (or other mix-in) and spoon batter into prepared muffin tins, about 1/4 cup in each tin.
Bake for 15 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Cool and enjoy! If desired, top warm muffin with a drizzle of honey.

    This was sooo yummy! A definate staple to my diet now. I cooked 2 batches so I could freeze one batch. These are great to grab and go to add with my fruit and yougurt in the mornings on the way to work or when I get to the office - 8/4/09
