Ingredients

    Chicken thighs, skinned but with bones ~ 3lb
    Baby carrots ~ 20 carrots
    Celery~4 stalks
    Parsnips 3
    Onions 2
    Water lots
    Salt
    Pepper
    Manischewitz Matzo Ball mix, prepared

    You can adjust all amounts to your taste. It's soup after all.

Directions

Make Matzo balls according to package directions.
In large soup pot combine chicken (I always remove the skin, but leave the bones for flavor) and water (amount of water should be adjusted to volume of chicken) and heat over medium heat
Peel onions, and chop other veggies to desired size
Skim off fat from top of soup, let cook another ~5 minutes and skim again.
Remove chicken bones (if desired)
Add salt and pepper to taste
Add onions and allow to cook for 15 minutes.
Add other veggies and cook for 30 minutes
Add Matzo balls and cook for 30 minutes

Makes ~ 10 servings
