Ingredients

2 lbs boneless chicken
2 roma tomatoes
1 bunch plucked and chopped mint leaves
1.5 inch ginger chopped
10 cloves garlic chopped
2 serrano peppers, seeded and chopped
1/4 tsp cayenne pepper
1tsp turmeric powder
salt to taste
4 cloves
4 cardamom pods
2 inch stick of cinnamon
2 bay leaves
2 tblspns canola oil
3 tblspns unsalted butter
1.5 cups basmati rice
Directions
1. Soak rice in water for 20 minutes. Drain and reserve soaking water.
2. Heat oil and butter mixture; when hot add dry spices(cloves, cardamom, cinnamon, and bay leaf).
3. Add ginger, garlic - fry for one minute; Add onions, serrano pepper, tomatoes, mint. Stir until onion is wilted.
4. Add chicken, turmeric, salt, and cayenne. Saute. Cover and cook 2 minutes.
5. Add the rice and measure out 2 1/4 cups of soaking water. Adjust water to amount present in chicken mixture. Salt to taste.
6. Bring mixture to a rolling boil. Reduce heat to minimum; cover and cook for 20 minutes.
Enjoy.

It was a bit of work - but seemed worth it. I took a few shortcuts - I used spices in my cupboard for the Cardamom, Cloves. I also used Ginger paste and Garlic paste in stead of chopping all that. The ingredients were missing the onion so I added 1/2 an onion. I also ended up cooking 30 mins extra. - 3/8/09
