Egg, fresh, 1 medium
Bread crumbs, dry, grated, plain, .5 cup
Chicken Breast, no skin, 6 ounces
Olive Oil, 2 tbsp
Tomato Sauce, 425 gram(s)
Garlic powder, 1 tbsp
Basil, 1 tbsp
Oregano, ground, 1 tbsp
Thyme, ground, .25 tsp
Parmesan Cheese, shredded, 2 tbsp
Directions
Makes 3 servings
Prep:
rinse then pat dry 6oz boneless skinless chicken breast
beat 1 medium egg in a bowl
pour breadcrumbs in another bowl
preheat oven to 425
Cooking:
Chicken
dredge chicken in egg then coat with breadcrumbs
fry in a skillet with the olive oil until browned on all sides about 10 min.
Sauce:
Add 1 15oz can tomato sauce to a small sauce pan on medium heat
add all remaining spices to the sauce and cook until it bubbles
Assembly:
Coat bottom of a 9"X9" baking dish with a thin layer of sauce
lay chicken on sauce
coat chicken with remaining sauce
bake for 30 min or until a meat thermometer reads 170 inserted into the length of the breast
sprinkle cheese on top and bake for 5 min.
Serve over pasta or rice or in a sandwich roll.
