Ingredients

    1 c. whole wheat flour
    2/3 c. brown sugar, unpacked
    2 t. baking powder
    1/4 c. skim milk
    2 T. light margarine spread

    1 large can peaches, sliced, in juice or water, drained

Directions

mix dry ingredients

melt margarine

add margarine to dry and slowly add milk, til pancake batter consitency

in sprayed 8x8 pan, pour mixture; top with drained peaches

bake 425 for 20 minutes, or until light brown and bubbly

    I did try it with 1/4 C. milk and it definitely was not pancake batter consistency. The middle sunk and seemed soggy. I'd give it a 3 as written. Maybe the recipe should read 1 and 1/4 C. milk!!! - 1/8/11
