Ingredients

    1 c. all purpose flour
    1 c. whole wheat flour
    3/4 tsp. baking soda
    1/2 tsp. salt
    1/2 c. granulated sugar
    1/2 c. brown sugar, packed
    1/4 c. butter, softened
    1/4 c. Egg Beaters (equivalent to 2 eggs)
    1 1/2 c. mashed bananas (approx. 3 medium)
    1/3 c. no fat sour cream
    1 tsp. ground cardamom (or more to taste)
    1/3 c. finely chopped pecans, pistachios...any nut of choice

Directions

Carefully measure and combine first four ingredients, stirring with a whisk.

Place sugars and butter in a large bowl, beating on medium until well blended. Add the eggs one at a time (or half at a time if using the substitute), beating after each addition. Add banana, sour cream, cardamom; beat until blended. Add flour mixture; beat at low speed just until moist. STir in nuts by hand. Spoon batter into a 9X5
