Introduction

Ingredients

16 oz tilapia filets
1 tbsp italian seasoning
2 cups tomato and alfredo Pasta sauce
1/2 cup parmesan cheese
1 tbsp EVOO
1 -10oz bag fresh spinach
salt and pepper to taste
Directions
Heat oven to 450 degrees.
Coat large baking dish/sheet w/ non stick cooking spray.
Season both sides of filets w/seasoning and place on baking sheet, spoon pasta sauce evenly over filets Bake 10-15 mins depending on thickness of filets (they should be flaky white).
While the fish cooks saute the spinach over medium high heat w/olive oil adding handfuls at a time to a large skillet or wok until spinach wilts (20-30 secs) remove from heat and salt and pepper to taste.
Layer spinach on bottom of 4 plates divided evenly then top w/fish and sprinkle w/cheese then serve immediately.
