Ingredients

Chicken Breast, no skin, 4 breast
Flour, white, .5 cup
Vegetable Oil, 4 tbsp
Chorizo, 6 oz
Onions, raw, 1 large, chopped finely
Peppers, sweet, red, fresh, 1 medium, chopped finely
Saffron, 1 tsp
Instant White Rice, 1.5 cup
Garlic, 3 cloves minced
Chicken Broth - 99% Fat Free, 1.5 cup
Peas, frozen, 1 cup
Directions
Season chicken with salt and pepper, then dredge in flour.
Add oil to skillet and heat over medium-high until just smoking. Brown chicken on one side, for about 5 minutes. Transfer to a plate and set aside.
Add remaining oil, saute chorizo, onions, pepper, and saffron until onions soften, about 5 minutes. Add rice and garlic. Stir in until fragrant, about 30 seconds.
Add broth and nestle chicken into rice. Cover and cook over medium-low heat until chicken is done, about 10 minutes.
Remove chicken. Turn off heat and add peas. Cover until warmed through, about 2 minutes. Season with salt and pepper and serve with chicken.
