Ingredients

2 tablespoons of olive oil
12 garlic cloves, 8 smashed and 4 finely chopped
1 bunch of parsley
12 ounce container of ricotta cheese
1/2 cup of shredded parmesan
1 bag of trader joes shrimp
4 slices of french bread
Directions
in a large skillet heat the olive oil over medium heat. Cook the smashed garlic until golden, about 5 mins. Using a slotted spoon take garlic out while leaving oil in pan. put garlic in food processor. add the parsley to the garlic in the processor and pulse to finley chop. set aside 1/4 of mixture and add both cheeses to processor, pulse to combine. Preheat the oven to 500.
In the same skillet, heat the reserved oilve oil and cook shrimp adding in the remaining garlic. season to taste, stir in reserved garlic mixture (1/4 cup).
Spread the cheese mixture on the bread and arrange on a lined with parchment paper cooking sheet. spoon the shrimp mixture on the bread and sprinle with more parmesan. bake until cheese is melted about 10 minutes.
