Introduction

A hearty, rustic soup. Great on cold afternoons when you have been outside! A hearty, rustic soup. Great on cold afternoons when you have been outside!

Ingredients

    6 cups dried baby lima beans,
    1 pound bacon, cut into 1 inch pieces
    3 medium onions, chopped
    4 cups 99% fat free chicken broth
    salt and pepper to taste
    water if needed to thin ssoup

Directions

Soak dried baby lima beans in water overnight.
Rinse and put in large stock pot with chicken broth. Chop onions and add to pot. Cut bacon into 1 inch pieces, add to pot. Stir. Bring to a boil, stirring frequently. Reduce heat to simmer. Stirring when you think about it.
Simmer for 3 to 5 hours on low heat. Untill beans are tender. Season with salt and pepper at the end. Enjoy! Makes 8, 1 cup servings
