Ingredients

6lbs Boneless Skinless Chicken Thigh
2 15oz cans Hunt's Tomato Sauce, no salt added
2 cups chopped Green Peppers (bell peppers)
2 Medium Onions, chopped
2 14.5oz cans Del Monte Diced Tomatoes, No Salt Added
2 tbsp dried Parsley, dried
2 tbsp Basil
1 tbsp Oregano
9 tsp Splenda granulated
Directions
Pour a thin layer of tomato sauce in the bottom of the crock pot, then arrange boneless, skinless chicken thighs or breasts in a single layer. Chop onion and bell pepper and layer over chicken. Mix remaining tomato sauce, diced tomatoes, 1/2 cup water, and spices in a bowl and pour in an even layer across the top, covering well.
Cook on low for 10-12 hours.
When done cooking, break up the chicken thighs into with a spatula and mix well.
Makes 18 servings, approximately 2/3 cup per serving.

I am going to make this, but what is the splenda for and can I leave it out? - 11/1/10

The splenda is there to cut the higher level of acidity in the canned tomatoes/sauce. You can leave it out If the acidity doesn't bother you, or accomplish the same thing with regular, granulated sugar.
