Ingredients

3/4 cup peanut butter
3/4cup honey
3/4 cup granulated sugar
2 eggs
1/4 cup whole milk
3 tablespoons light olive oil or other light oil
2 teaspoons vanilla extract
3 cups oats
1 3/4 cup whole wheat flour
1 teaspoon baking soda
1 cup raisins
1/2 cup coarsely chopped walnuts
Directions
In large bowl, beat peanut butter, honey and sugar until creamy. Add egg, milk, oil and vanilla; mix wsell. Combine oats, flour and baking soad and add to the peanut butter mixture. Mix well. Stir in raisins and nuts.
**Note: If using old fashioned oats, add 2 tablespoons more flour (calculated like this).
Cover and chill at least 30 minutes.
Heat oven to 375 degrees. Remove dough from refrigerator and drop balls onto ungreased cookie sheets . Bake 7-9 minutes or until light golden brown.
Yields: 5 dozen cookies (60)
