Ingredients

    1/2 lb. chicken breast, cooked and shredded
    1/2 c. chopped avocado
    4 turkey bacon strips, cooked and crumbled
    1 celery rib, thinly sliced'
    2 T. crumbled blue cheese
    2 T. lemon juice
    1 T. honey
    1 1/2 t. Dijon mustard
    1 garlic clove, minced
    1/4 t. dill weed
    1/4 t. salt
    1/8 t. pepper
    1 T. olive oil
    5 Romaine leaves, torn
    4 whole wheat flour tortillas (8") warmed
    1 medium tomato, chopped

Directions

In a small bowl, combine the chicken, avocado, bacon, celery, onion, olives and cheese. In another small bowl, combine the lemon juice, honey, mustard, garlic, dill weed, salt, and pepper. Whisk in the oil. Pour over the chicken mixture; toss to coat. Place romaine on each tortilla; top with 2/3 c. chicken mixture, then with tomatoes. Roll up each tortilla. Yield: 4 serviings

    The Sodium/Potassium ratio in this recipe is backward for good health. Leave out the salty ingredients-- blue cheese, turkey bacon, and salt, and cut the mustard down to 1/2 teaspoon. Find (or make) a wrap that had no or samll amount of sodium and this would be a truly healthful on the go meal. - 7/9/09

    My husband and I both enjoyed this very much. We ate it as a salad without the wrap. The dressing is actually quite good. We'll make this again. - 7/14/09

    These were delicious. I'd suggest editing either the ingredient list of the directions though. There are ingredients in the directions that do not appear on the list. - 7/11/09

    I chopped up fresh red onions, and omitted the cheese altogether, and threw in some cayenne pepper into the mix. I haven't tried it yet, but I have to say-it looks and smells AWESOME. Kudos! - 7/9/09

    I will make some changes to this recipe, but the basic idea is great. I will definitely try it tonight for a refreshing Summer meal. - 7/10/09
