Ingredients

1 lb potatoes (I use red potatoes because they have a lower effect on blood sugar)....peel or don't peel...your choice!
1 tablespoon olive oil
1/2 teaspoon each: salt, garlic powder, onion powder, paprika
1/8 teaspoon black pepper
dash of cayenne pepper (optional)
Directions
Wash and cut potatoes into wedges...the thinner they are, the faster they cook!
Toss potatoe wedges in large bowl with oil and seasonings. When well coated, put potatoes onto baking sheet or in large pan that has been sprayed heavily with cooking spray.
Bake until golden brown about 45-60 minutes in a hot oven....400 degrees or more....depends on how soon you want them done and how close you want to watch them! Loosen from pan and turn ocassionally as they will stick.
