Introduction

If you have a GT-Xpress cooker this is an adaptation of a recipie seen on the infomercial. I have also made it in a small non-stick skillet and a small omelet pan. It is filling and very tasty. Ingredients

    1 package your favorite stuffing mix (these do come in low-fat varieties)
    2 ounces shredded roast (pork or beef)
    2 ounces reduced fat cheddar cheese
    1 can tomatoes with green chilies (or your favorite salsa
    1 egg
    Fat free sour cream (if desired)

Directions

Preheat GTXpress or small non-stick skillet. Combine all ingredients (except sour cream) in mixing bowl. Let sit for about a minute for stuffing mix to absorb moisture from tomatos. Score surface of ingredients into equal portions. Lightly spray cooking surface with non-calorie cooking spray and spoon serving portion into pan (or GTXpress cooking wells. Close lid and do not open for 8-10 minutes. If using skillet method, check edges for doneness and flip over when bottom is browned. When done, transfer to serving plate and top with sour cream if desired.
