Number of Servings: 12
Ingredients

2 cups cooked blackeyed peas, drained and rinsed
12 oz silken firm tofu (I used Mori-Nu Lite)
1/3 cup sugar
1/3 cup brown sugar
5 oz semisweet chocolate, chopped
4.5 oz bittersweet (70% +) chocolate, chopped
1/4 cup cocoa, sifted
3/4 tsp baking powder
1/4 tsp baking soda
Directions
Preheat oven to 350F, lightly grease and line a 9×5 loaf pan or 9" springform.
Combine the black eyed peas and tofu into your food processor, process aout 6-7 minutes, until the mixture is completely smooth.
Add the sugars and pulse to combine.
In a double boiler, melt the chocolates together.
Add to the food processor, and then let it run for 4 minutes longer, scraping down the sides halfway through.
Sift together the cocoa, baking powder, and baking soda and add to the processor mixture, pulsing to combine.
Bake for 60 - 70 minutes, until a toothpick inserted into the center comes out mostly clean.
Chill overnight, but bring to room temperature before serving.
