Introduction

Yummy! Yummy! This is so good, you will not believe it is nutritious!! Yummy! Yummy! This is so good, you will not believe it is nutritious!!
Number of Servings: 4

Ingredients

    4 Chicken Breast, skinless, boneless (5 oz.)
    1 Egg White
    1 T Water
    1/2 C. Walnuts (finely chopped)
    1/4 C. Bread Crumbs

    Sauce
    2 C. Pomegranate Juice
    2 t. Crystallized ginger (minced)
    1 T. Honey

Directions

Preheat oven to 425 degrees. Coat a baking sheet with cooking spray.

Whisk the egg white with the water in a shallow dish. Combine bread crumbs and walnuts in another shallow dish. Dip the chicken in the egg and then the nut mixture. Place on baking sheet. Bake, turning once, for about 15-18 minutes. Drizzle with Pomegranate sauce.

Sauce:
Bring Pom Juice, honey and ginger to boil. Boil for 15 minutes, until juice is reduced by half. Remove from heat.

    Incredible!
    I whizzed the walnuts very fine so I could better use them for the breading, but I had to add 1/4 cup oats to counteract the moisture. Instead of making a honey/ginger sauce I just used Pomegranate Molasses (common at Middle Eastern stores), lightly drizzled on top.

    yummy. I made a couple changes to the sauce because I am bad. Addded a little extra honey, a touch salt, cayanne pepper and a pat of butter. - 3/27/09
