Ingredients

    Crust for salmon:
    2 Tbsp Coriander seed (toasted and then ground)
    2 tsp sugar
    1 tsp cumin
    1 tsp curry
    1/2 tsp salt
    Mix all ingredients in small container.

    Stuffing:
    1 can canned cabmeat
    3 green onions finely sliced
    1 tsp dried dill
    1 tsp dijon mustard
    1/4 cup mayo
    2/3 cup grated swiss cheese or fresh chopped spinach
    3 tsp Italian bread crumbs

    1 salmon fillet, skin removed

    Spread mixture on fillet, roll up, use toothpicks to keep roll. Place in crust mix, sear salmon in pan of oil on both sides. Place in baking dish and bake for another 15 minutes on 350.

Directions

Makes about 4 servings, but depends on thickness of salmon.
