Introduction

Ingredients

    6 Lasagna Noodles
    1/2 c. Ricotta Cheese, part skim
    1/2 c. Parmesan Cheese, shredded
    1/2 c. Mozzarealla Cheese, part skim, shredded
    1/2 medium Onion, chopped
    3 colves Garlic, chopped
    1 tsp Extra Virgin Olive Oil
    3 c. Fresh Spinach, chopped
    3 c. Pasta Sauce
    Crushed Red Pepper to taste (optional)

Directions

Cook Noodles according to directions on the box. When finished drain and let the noodles sit in cold water until needed.

Add Extra Virgin Olive Oil to hot pan. Add Onions and cook until transparent, then add Garlic and Spinach and cook until the spinach wilts. Remove cooked Spinach (with onions and garlic) and set aside. Add about 1 1/2 c. pasta sauce to bottom of pan with heat off.

Add Ricotta, Mozzarella, Parmesan, cooked Spinach (with onions and garlic) and 1/4 c. Pasta Sauce in a bowl and mix, add crushed red pepper to cheese mixture for extra spicy flavor, if desired. Lay out 1 lasagna noodle and add approx. 1/4 c. cheese mixture and roll the remained of the noodle around cheese mixture. Place in the pan with the sauce, end down. Repeat with remaining noodles.

When all noodles are placed in the pan, add remaining sauce over the noodles and cook covered for 10 minutes on medium/low heat. After 10 minutes add Mozzarella cheese atop each roll and cook for another 2 minutes.
