Ingredients

2 Chicken Thighs (bonless, skinless) in chunks
1 Onion (medium) cut into coarse pieces
2 cloves fresh Garlic
1/2 cup Coconut Milk
1/2 cup Green Peas
1/3 cup Chick Peas
1/3 cup Red Kidney Beans
3 tsp Thai Green Curry Paste
Directions
This recipe makes 2 servings
Cook chicken pieces until done in frying pan on medium low.
Sautée vegetables and garlic together seperately and when onions have caramelized, combine with chicken.
Add Curry Paste and stir until everything is well coated and fragrant.
Add coconut milk and simmer on low until done.
Serve over bed of rice or rice noodles.
If you desire you may also add Thai vegetables such as Lemongrass or Water Chestnuts for a more authentic taste.
To make less spicy, use less Curry Paste.
