Ingredients

    1/2 cup oatmeal (I like to grind it into a finer powder with hand blender, but not too fine)
    1/2 cup liquid egg whites or 4 egg whites
    1/2 chopped apple (can be chopped very fine or a little bigger if you like big bites)
    1 scoop protein powder
    1tsp to 1TBS cinnamon (depends on taste)
    Extra water (optional depending on thickness)

Directions

Mix oatmeal, egg whites, protein powder, and cinnamon together in a bowl (can blend by hand or with a blender). Batter should be thin enough to pour into a pan, add some water if necessary. Stir in apples. Heat a large pan, sprayed with non stick spray, on high. When pan is hot pour mixture in. Lower heat to medium and cover with a lid. Cook for approximately two to four minutes until bottom is firm. Flip pancake over (I use two spatulas so it doesn't break). Cook for two more minutes. Serve as is or with unsweetened applesauce (not included in calorie count).
