Introduction

Inspired by the energy bars in The Thrive Diet, but this is my own variation. Inspired by the energy bars in The Thrive Diet, but this is my own variation.
Number of Servings: 12

Ingredients

    7 Medjool dates (about 3/4 cup chopped)
    1/4 cup Brazil Nuts
    1/4 Raw Cashews
    1 banana
    2 Tbsp Maca Root Powder, optional
    1/2 tsp Vanilla Extract
    1/2 teaspoon cinnamon, ground

    1/4 cup shredded Coconut, to coat bars.

Directions

Put all ingredients except for the coconut into a food processor. Process until the mixture is smooth.

Divide the mixture into 12 bars or balls. They will be considerably smaller than store bought energy bars. Roll or press into the coconut.
TIP: I usually dump the whole mixture out onto some wax paper and then shape it into a brick to throw in the freezer for an hour or so. This makes it easier to work with.

These tend to be really soft at room temperature so try keeping them in the freezer and pulling them out before a long run or ride.

Also, I like the maca because it has a malty flavor and is a good restorative food for endurance athletes. It can be expensive though; leaving it out won't make too much of a difference.
