Introduction

I love this dip with fresh carrot sticks or pita chips. I love this dip with fresh carrot sticks or pita chips.
Number of Servings: 6

Ingredients

    15 oz can Chickpeas (garbanzo beans)
    6 cloves Garlic
    1 cup sweet red pepper
    2 tbsp Olive Oil
    Juice from 1/2 a lemon
    1/2 tsp. Garam Masala (Indian Spice blend - if you don't have this you can substitute your favorite spice blend)
    1/2 tsp. Crushed Red Pepper
    Salt to taste

Directions

1. Roast the sweet red pepper and garlic in 400 degree oven for about 30 minutes, until garlic is soft and golden.

2. Drain and rinse chickeas, put in blender/food processor.

3. When pepper and garlic are done roasting, add them, and rest of ingredients, to food processor.

4. Blend until smooth - less than 5 minutes.

5. Serve with assorted veggies and/or crackers.

Makes 6 1/4-cup servings.
