Introduction

This healthy, quick and easy alternative to the traditional taco salad is full of flavor and low in calories and fat. Feel free to use reduced fat shreadded cheese in place of the regular version. Omit the peppers and onions if you're not a fan. You can also add black olives, if you prefer. Ingredients

    2 cups Mixed salad greens (or more!)
    1/2 cup canned black beans, drained and rinsed
    1/2 cup Chunky salsa, mild, medium or hot variety
    1/4 cup 2% reduced fat Kraft Mexican blend cheese
    1/4 cup sweet red peppers pepper (optional)
    1/4 cup Green onion (optional)
    Optional: hot sauce

Directions

Drain and rinse the canned black beans then microwave (in a glass bowl) for 2-3 minutes. Wash and slice green onions and red bell pepper. Place washed salad greens in a large bowl and top with 1/2 cup of warmed black beans. Next, place 1/4 cup of shreadded cheese on top of the beans, then top with 1/2 cup of salsa. Garnish with diced red bell pepper and green onion. Enjoy!
