Introduction

My family loves my enchiladas. They are easy to make. If you aren't counting calories or carbs, you could use regular tortillas. Serve refried beans or caesar salad to make a complete meal.

    Incredible!
These were so good. The family just loved them! I did have rice to go with it. - 4/24/21

    Incredible!
Used ground turkey in place of the chicken. There's a bit too much enchilada sauce so I should have made some rice to go with it. I'll do that next time since I'll definitely make this again. Great recipe to feed a crowd. - 6/27/13

    Incredible!
This was really good. We left out the peppers, but added red paper flakes and made a home made enchilada sauce. Everyone ate them including my kids. We'll be making these again! - 4/18/10
