Ingredients

1/2 cup cocoa
1 cup milk, divided
1 1/2 cups granulated sugar
1/2 cup unsalted butter
3 eggs separated
1 1/2 cups cake flour
1 tsp. baking soda
1 tsp. baking powder
1 tsp. vanilla extract
Directions
preheat oven to 350 degrees
butter 2 square cake pans, line with parchment paper and butter the paper. set aside.
sift 1/2 cup cocoa into 1/2 milk and stir until smooth.
cream butter and sugar
add egg yolks, beat well
add milk and cocoa, beat well
sift flour, baking powder, baking soda
add flour mixture alternately with 1/2 cup milk
add vanilla; beat well after each addition
beat egg whites until stiff and fold into batter
pour into prepared pans and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
cool on wire rack for 10 minutes.
run a knife around the edge of the pans and invert onto wire rack. cool completely before icing.
ICING
cream 1/2 cup unsalted butter.
sift 1 lb. powdered sugar and 3 Tbl cocoa together and gradually beat into creamed butter.
add sufficient strong black coffee to bring mixture to spreading consistency.
The Birthday child gets a corner piece - that's the tradition. Note that I have this calculated at 12 servings - cut across the middle and then 6 slices on each side.
