Introduction

A friend passed this recipe on to me. I tweaked it a teensy bit. She makes it in one huge (24 oz.) mug, but that is *way* too many calories for me! I haven't made it yet, but plan to try it soon, divided into 4 servings. A friend passed this recipe on to me. I tweaked it a teensy bit. Ingredients

    4 Tbsp flour
    4 Tbsp sugar
    2 Tbsp cocoa
    1/2 tsp baking soda
    1/2 tsp baking powder
    1 egg
    3 Tbsp milk
    1 tsp lemon juice
    1-1/2 Tbsp Enova oil
    1/2 tsp vanilla
    3 Tbsp. mini chocolate chips

Directions

Combine dry ingredients in medium bowl.

Add egg, milk, lemon juice, oil & vanilla - mix well.

Add any optional ingredients, if desired.

Divide batter between 4 coffee mugs. Place the coffee mugs in the microwave and cook on high for 3 minutes.

As it cooks, the cake will rise above the cup but shouldn't make a mess (larger cups ensure this).

Cool a couple of minutes and enjoy!
