Introduction

So healthy! I used frozen chicken breast, but fresh can be used. Also, I boiled the chicked to reduce fat, but it can be grilled, fried, or baked. So healthy! I used frozen chicken breast, but fresh can be used. Also, I boiled the chicked to reduce fat, but it can be grilled, fried, or baked.

Ingredients

    1 Boneless, Skinless Chicken Breast (frozen)
    2 Cloves of Garlic
    1 small Sweet Onion
    1/2 Lemon
    1/2 Cup Minute Brown Rice
    I Can't Believe It's Not Butter Spray

Directions

Boil Chicken Breast for approx. 25 Minutes.
While chicken is cooking, prepare brown rice per the box instructions but add the lemon to the water (microwave or stovetop.)

In a frying pan, spray butter spray to avoid sticking. Add onions and garlic and sautee until golden brown. Add tender brown rice and fold together.

Top with chicken breast (seasoned as you like, lemon pepper works great or grill seasoning.)
