Ingredients

    1/2 lb. linguine
    2 tbs olive oil
    1 tsp lemon juice
    1 tsp salt
    1 tsp lemon pepper
    1 tsp fresh cilantro
    12 oz. peeled fresh shrimp
    4 oz. asparagus, cooked and cut into 2 inch pieces
    14.5 oz. can diced tomatoes
    6 oz. jar artichoke hearts
    6 oz. jar roasted red pepper

Directions

Boil pasta in salted water. Add oil, lemon juice, and cilantro to a large heated skillet. Add and cook shrimp until almost done. Season with salt and lemon pepper. Add in remaining ingredients, cover, and sautee for five minutes. Stir in pasta and serve. Makes 4 servings.
