Introduction
This is a low-sodium, high-fiber version of "Special K Loaf" made with Bran cereal instead of Special K. A vegetarian meatless version of meatloaf. Ingredients

10 oz. non fat Cottage Cheese, Nonfat
8 tbsp I Can't Believe It's Not Butter, Fat Free Spread
1 medium onions diced
1.25 cup Vegetable Broth
1 large Egg
3 Egg whites
4 cups Wheat Bran Flakes Cereal, crushed
0.75 cup chopped walnuts
Directions
1. Preheat oven to 350 F
2. Spray large baking pan with non-stick spray
3. Get a large mixing bowl and set aside.
4. In sauce pan, melt the I can't believe it's not butter spread and add onion. Saute onions for 3 to 5 minutes.
5. Transfer sauteed onions to mixing bowl and add all the remaining ingredients except the wheat bran cereal.
5. Mix Well
6. Add the wheat bran cereal, mix well and put in your greased baking pan.
7. Cover with foil and bake on the top rack for 45 minutes.
8. Remove foil, turn off the heat to oven and let sit in the oven for at least 20 to 30 minutes.
