Introduction

Based on a recipe found at thenourishinggourmet.com - I adjusted the cocoa powder and agave to my taste.

This is not a low-fat recipe, but it is awesome for those who are dairy-free and/or prefer a healthier sweetener. You can also make it 100% organic by shopping carefully. Next time I'm going to try it with the reduced fat coconut milk.

Number of Servings: 12

Ingredients

    3 C coconut milk
    1/2 C agave nectar
    1/2 C cocoa powder
    1 tsp vanilla

Directions

Mix all ingredients together. (I used a blender) Freeze according to your ice cream maker's directions.

In my ice cream maker the mixture doubled in size as it froze, yielding almost 6 cups of ice cream. We spooned it out into 1/2 cup portions, ate some soft, and froze the rest.
