Number of Servings: 8

Ingredients

    1/2 Pkg Whole Grain Egg Noodles (6oz)
    1 can of Cream of Mushroom Soup (low sodium, lowfat)
    1.5 lbs of peeled shrimp
    1/2 tsp of dried basil
    1/2 large onion diced to preference
    1 bell pepper
    1/2 C milk (1%)

Directions

Chop Onion and Bell Pepper to size pieces of your liking and place in skillet over medium heat.
Add 2 cloves of minced garlic and pinch of salt
Let sweat.
Add 1 to 1.5 C of quartered mushrooms into pan
Add can of cream of mushroom soup
Add milk and stir over medium heat
Bring to boil, stirring frequently, add shrimp.
Turn heat to med-low and cover.
Cook 10 to 15 minutes (or until shrimp turn to light pink)
Serve with sprinkle of parmesan cheese
