Introduction

I just took the classic recipe and used some common sense healthy steps in making it. I just took the classic recipe and used some common sense healthy steps in making it.
Number of Servings: 16

Ingredients

    3/4c all-purpose flour
    3/4c whole wheat flour
    1/4 tsp baking soda
    1 1/2 tsp baking powder
    1/4 tsp ground cinnamon
    1 egg
    3/4 c sugar (I used Splenda, SugarBlend...so I used 1/4c and 2 tbsp)
    1/2 c chopped walnuts
    optional: 1 tsp finely shredded lemon peel
    1/8 tsp salt

Directions

Grease 8x4x2 loaf pan and preheat oven to 350.
In mixing bowl combine all dry ingredients, except sugar.
Make a well and add the wet mix (bananas, eggs, sugar, and oil).
Mix just until moistened (batter should be lumpy). Fold in nuts.
Pour mixture into loaf pan and bake for 50-55 minutes.
Cool for 10 minutes then remove from pan.
