Introduction

Ingredients

1 sm or medium red onion chopped
1 slice of reduced fat bacon
4 large carrots chopped
2 stalks celery chopped
3 cloves garlic chopped
3 1/2 cups organic fat free chicken broth
1/2 cup water
1 jalepeno diced with most seeds and ribs removed then chopped
2 cans black beans
1 can diced tomatoes
1/3 cup cilantro
1 small lime juiced
2 tsp ground cumin
1 tbsp mexican oregano
1 tsp cracked black pepper
Directions
Start by chopping the garlic then set it aside!!!chop the bacon and fry in the pot, add onions, jalepeno, carrots and celery. Cook until carrots are slightly tender. Add tomatoes, water, broth and beans then add the spices. Cook until the vegetables are completely cooked. Now you can add the chopped garlic. Cook for an additional 2 minutes then remove from heat and add it the juice from one lime and the chopped cilantro.
Serve alone or with a dollop of yogurt cheese or sour cream and chives.
