Ingredients

2cups Black-Eyed Beans(Chavali/Lobia/Rongi)soaked overnight
3medium ripe Tomatoes chopped
1.5tsps.Turmeric Powder
3tsps.Red Chilli Powder
2tsps.Coriander--Cumin Powder
3tsps.Goda Masala(any one recipe)
1.5"lump of Jaggery
OR
1.5tsps.Brown Cane Sugar
Salt to taste
SEASONING
2tbsps.Sesame Oil
2.5tsps.Black Mustard Seeds
1.5tsps.Cumin Seeds
7-8 Sweet Curry Leaves
5 whole Dry Red Chillies
2tsps.Asafoetida(Hing)Powder
Directions
Pressure cook the soaked Beans with sufficient Water for 3-4 whistles.Heat Oil in Wok and add the Black Mustard seeds,Cumin Seeds,Turmeric Powder,Sweet Curry Leaves,Dry Red Chillies and asafoetida(Hing)Powder in the order given and lower flame.When the Seasoning sputters add the chopped tomatoes and fry till soft and pulpy.Now add the Coriander--Cumin Powder and the Goda Masala Powder and fry for 2-3 minutes.Add the Red Chilli Powder,Jaggery and Salt to taste and cook for a minute more.Add the cooked Beans and the cooking liquid.Stir well and cover and cook for 6-7 minutes allowing the Beans to absorb the flavours.Adjust the thickness of the gravy to suit personal taste.serve hot garnished with chopped fresh Coriander(Cilantro)Leaves
