Ingredients

    1 Pound soft unsalted butter
    1 cup podwered sugar
    2 tablespoons Vanilla
    1 teaspoon salt
    2 cups finely chopped pecans
    powdered sugar for dusting

Directions

preheat oven to 350 degrees. beat butter and powdered sugar until light and fluffly. add vanilla, salt and pecans. stir in flour by hand. Do not over mix!
I use a small cookie scoop to portion out 60 cookies. shape them however you want. I just roll balls. place cookies onto buttered cookie sheet.( I use butter flavor spray). Bake for 10-12 min or until the cookies are just browning on the bottom. Cool on a rack for a couple minutes. Roll in powdered sugar to cover....let sit a min and toss again. When cold put in airtight container until ready to serve.
