Introduction

Ingredients

    Large baked potato with skin, cubed
    1 tbsp sweet pickle relish
    1/4 c sweet onion, chopped
    1 tbsp celery, chopped
    1 tbsp hard boiled egg, chopped
    1/2 tsp celery seeds
    1 tbsp Light Miracle Whip
    1 tbsp yellow mustard





Directions

Mix all ingredients. Refrigerate at least 4 hours to let flavors blend. Note: use egg whites and fat free salad dressing to cut fat.
Makes 1 cup

    Too much mustard for my taste. I will cut it in half next time. Otherwise, good way to use leftover mini new potatoes. - 8/4/19
