Ingredients

    1 cup old fashioned oats
    1 1/2 cup whole wheat flour
    2 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp salt
    1 tbsp cinnamon
    1/2 tsp freshly ground nutmeg
    1/4 tsp cloves
    1/2 tsp allspice
    1/2 cup brown sugar
    2 cups canned pumpkin or 1 15oz can
    1 snack size sugar free natural applesauce if you don't have this, you can add 1/2 cup total of water
    1/4 cup water
    1 tsp vanilla

Directions

Preheat oven to 350 degrees. Spray muffin pan with nonstick spray.

in large bowl add all dry ingredients and whisk together to blend. Add pumpkin and water and applesauce if using, and mix gently just until it's completely combined.

Divide batter into 10 muffin cups, the batter can be full in muffin cup, (it won't spill over they will just rise into a muffin top) and bake in center of oven until toothpick placed in center of muffin comes out clean, about 19-22 minutes.

When cool these can be frozen and wrapped in plastic and placed in large ziplock and taken out and placed in microwave for a minute or so to enjoy when needed.
