This is my attempt to make a classic casserole a little lighter... we take it to all sorts of events and everyone always loves it! This is my attempt to make a classic casserole a little lighter... we take it to all sorts of events and everyone always loves it!
Number of Servings: 16

Ingredients

    Casserole:
    1 2lb bag of shredded hashbrowns
    2 cups shredded light cheddar cheese
    1 can Campbell's Condensed Cream of Chicken Soup (98% fat free)
    1/2 cup light margarine (melted)
    1 8 oz package of light sour cream
    minced garlic, salt, and pepper to taste

    Topping:
    1/4 cup light margarine (melted)
    2 cups crushed Crispix or corn flakes

Directions

Mix hashbrowns, cheese, soup, sour cream, 1/2 cup melted butter, salt, pepper, and garlic. Spread in 13x9 casserole dish (spray with cooking spray).

Melt 1/4 butter in small sauce pan, add crushed cereal and stir to coat. Spread on top of potato mixture.

Bake at 350 for 45 minutes

    OH SO YUMMY, everyone in my family loved it. I think I might add some meat to it in the future cuz the husband likes meat for dinner. Either that or grill up a chicken breast - 7/9/09
