Ingredients

    3 T. Red Miso
    1 t. dashi flakes(fish flakes) or 2 T. fish sauce
    3 Scallions, c hopped
    1 c. mushrooms, thinly sliced
    1 c. bok choy, thinly sliced with leaves
    1 c. rice noodles
    1/2 C. Tofu, firm, diced into 1/4 "cubes
    4 c. water

Directions

1. Pour water into a 3 qt. saucepan. Add fish flakes.

2. Mix miso paste with 1/4 water and mix until dissolved. Add to water mixture.

3. Add the scallions, mushrooms, bok choy. Simmer for 5 min.

4. Add rice noodles and simmer 5 more min. until noodles are cooked.

    When cooking miso soup or miso-based stews, add the miso at the end of cooking time or the heat will cause it to lose some of its flavour. Avoid boiling miso soup after the miso's added. - 1/23/13

    If you use fish sauce or dashi flakes, this isn't vegetarian. Just sayin'. However, it tastes just as good without them. - 5/13/11
