Introduction
I had left over mashed potatoes and didn't know what to do with them. Then I remembered my grandmother would always take ground beef, cream of mushroom soup, and green beans, shove mashed potatoes over the top and bake in a dutch oven. Oops, I didn't have green beans, ground beef, or cream of mushroom soup. This was MY result! I had left over mashed potatoes and didn't know what to do with them. Ingredients

20 oz. ground turkey
1 med chopped onion
1 clove garlic, minced
1 can diced tomatoes, undrained
1 can black beans, drained and rinsed
1 can sweet corn, drained
1-2 tbsp. ground cumin
1-2 tsp. paprika
1-2 tsp. cayenne pepper
2.5 - 3 cups mashed potatoes
Directions
Brown the turkey, onion, and garlic together in a Dutch oven. Drain excess fat. Place meat back into the pot and add remaining ingredients except mashed potatoes. Preheat oven to 350.
Cook meat mixture on medium heat for about 15 minutes, until the spices have a chance to blend. Remove from heat and spread the mashed potatoes over the top. Sprinkle more paprika over all.
Bake at 350 for 35 minutes.
Makes 6 or so generous 1.5 cup servings.
Calories will vary based upon how you make your mashed potatoes. You can always use instant potato flakes and make according to package directions. Add more or less spices depending on your palate.
